Don't you just LOVE making super 'naughty' looking foods which are secretly really healthy, and what's more, by using Kodiak Cakes brownie mix, half the work has already been done for you.
You can get as creative as you like with the layers too! I've gone for sugar-free marshmallows and wafers as well as sugar-free chocolate syrup - See, it's all totally guilt-free indulgence ;)
Ingredients: (makes one impressive stack)
- 200g Kodiak Cakes Brownie Mix
- 50g Libby's Pumpkin Puree
- 1 Egg
- Sugarfree La Nouba Marshmallows
- Hershey Sugar-Free Chocolate Syrup
- Sugar-free Vanilla Wafers
- 20ml Cashew milk
- 1 TBS coconut oil (See range of coconut oils here)
Step 1. Measure out the Kodiak Cakes mix then stir through the coconut oil, egg, pumpkin puree and cashew milk (these extras make it incredibly gooey!)
Step 2. Cook as per instructions then allow cooling before cutting into bite-sized squares.
Step 3. Time to get creative... Layer up the brownies with the marshmallows and wafers using the chocolate syrup as an edible 'glue'
Step 4. Sit back, admire, then tuck in! :P
